Carrot & Coriander Soup

This soup is perfect for those cold long winter days. This dish was a winner with my kids. If you struggle getting them to eat vegetables this carrot and coriander soup is for keeps.

Facts: Carrots are found in many colours, including yellow, white, orange, red & purple. Orange carrots get their bright colour from beta carotene, an antioxidant that your body converts into vitamin A.

Nutrition facts for two small medium raw carrots (100) grams are:

Calories 41

Water 88%

Protein 0.9 grams

Carbs:  9.6 Grams

Sugar: 4.7 grams

Fibre: 2.8 grams

Vitamin & Minerals

Vitamin A: good vision, growth, development & immunise function

Biotin:  AB important role in fat & protein metabolism

Vitamin K1: also known as phylloquinone, important for blood coagulation and can promote bone health. 

Vitamin B6: conversion of food into energy

Potassium:  helps blood pressure

This simple vegetable can be eaten raw or cooked, so with all the benefits there are really no excuses not to have them!!

Now with the COVID pandemic we are now at home for longer which means we are almost definitely picking more in the fridge. Before you reach for those crips or biscuits grab yourself some chopped up 🥕 lol!
